Fancy something warm and comforting? This is a super quick and easy crumble recipe that can use up any fruit and be made in advance, popped in the fridge (or freezer) and cooked when you get home from work/dog walk/christmas shopping (too soon?).
Ingredients - play around with the spices if theres something you really like such as cloves or ginger etc instead of just cinnamon.
1 1/2 (210g) cups gluten free flour
3/4 tsp xanthan gum (optional)
1/2 cup gluten free oats (70g)
1/2 cup demerara sugar (100g)
1/2 tsp ground ginger
pinch of salt
168g of butter/dairy free butter/ or melted coconut oil
5-6 cooking apples, peeled, chunkily chopped
2 tbsp gluten free flour
1tsp allspice/nutmeg/cinnamon (whatever you prefer)
1/3 cup (75g) demerara sugar
1/3 cup (40g) pecans, chopped (optional)
to serve - are you an ice cream/cold custard or warm custard kind of person? This is crucial information…
Oven set to 180C. Make up to topping by adding all the dry ingredients in a bowl and mix. Add in your butter, or butter alternative and mix till it resembles chunky breadcrumbs. Put to one side and make up the filling.
Mix the filling ingredients in a bowl and then pop in the base of your chosen oven proof dish. I then fridge my crumble until dinner time, but I don’t think its a necessary step. Just handy to do in advance!
Bake in the oven till golden brown. In the aga I cooked in the SO for 20 mins then RO for 10. SO somewhere between 25-35 in a normal oven I think. Serve with cold custard, sat next to the fire, surrounded by candles, cosy TV and joy!
